Casòn Hirschprunn produces a white and a red cuvée wine in two different qualities, which Alois Lageder classifies as Estate Wines and Estate Reserve Wines.
Careful selection at harvest time assures the quality of the two Estate Wines, which are the white "Etelle" and the red "Corolle". In composition, the Estate Wines resemble the Estate Reserve Wines, and in style as well as character, the wines of these two different levels share many features. For the Estate Reserve Wines – the white "Contest" and the red "Casòn" –

rigorous selection occurs in both the vineyards and the cellars. Only the very best grapes of the very best parcels are included. And only those wines which develop their full potential in the course of maturation are finally composed, on the basis of a well-selected palette of varieties, into Estate Reserve Wines.
