In the realisation of its philosophy, Casòn Hirschprunn breaks with Alto Adiges traditions. Harvesting, pressing and vinification dont focus on single varieties of grapes, but on compositions of varieties. The goal is to craft a wine that embodies the character of a place, thus summing up its origins. Alois Lageder is also convinced that a cuvée wine which brings together a balanced selection of several varieties of grapes is the route to greater complexity and increased perfection.

Rigorous selection takes place in the vineyards, during harvesting and again in the cellar. In the vineyards, the parcels to be used are selected according to exposure, soil and the age of the vines. At harvest, the grapes are rigorously sorted for ripeness and quality. In the cellar, the oenologist blends the best barrels of wine into the fine cuvées. In the cool, vaulted cellars of Casòn Hirschprunn, the wines are then able to mature under ideal conditions.
